In our new Fall Issue we feature the popular fish, and show how several Vancouver restaurants are serving it.  (Page 15)

One dish included in the illustration (shown above), is a creation of Chef Dennis Peckham of the Glowbal Group's Coast restaurant. However, it is only one variation available. In fact, right now, Coast is featuring an all Halibut Menu, and it will be available until September 25th. Starters

Halibut Carpaccio
heirloom tomato salad, organic basil, olive tapenade arugula, balsamic syrup. 18

Smoked Halibut Soup
smoked haida gwaii halibut, chilled leek and potato soup chive oil, chervil salad. 12

Mains

Grilled Halibut
melted walla walla onion, corn and mushroom ragout, arugula, potato crisp. 37

Seared Haida Gwaii Halibut
english pea, lemon mascarpone, mint risotto, frisee salad. 34

Warm Halibut Salad
salsa verde, shaved fennel, cucumber, mixed olives, pickled red onion salad, garlic confit. 33

Dessert

served with walnut crumble and madagascar vanilla ice cream. 9
