Santa's Five O Clock Shadow

SANTA'S FIVE O'CLOCK SHADOWCreated by Jay Jones (Market by Jean-Georges at the Shangri-La Hotel) and Trevor Kallies (Donnelly Group of Restaurants) A mellow, fragrant, tall and cool cocktail of subtle spicy aromas and flavours. The perfect reward after a long day at work (or during and after a long day of wrapping presents) Ingredients: Lillet Blanc Remy Martin VSOP Cognac Cinnamon Sticks (6 inch lengths) Angostura Bitters Fresh Orange Sparkling Tonic Water Ice (small cubes) Tools and Glassware: Measuring Glass Zester (twist making tool) Long Bartenders Spoon Collins (tall) glass (10-12) ounce capacity, simple and without facets is preferred) Recipe 1 ½ oz Lillet Blanc 1 oz Remy Martin Cognac 2 Cinnamon sticks 1 dash of Angostura Bitters Tonic Garnish Long orange twist Construction: Break the cinnamon sticks in half and drop into the collins glass. Add Lillet, Cognac, and a dash of bitters. Stir thoroughly with a long spoon, working the flavour of the cinnamon into the liquid. Fill glass with ice and continue stirring Fill with tonic and continue stirring. Make a long twist of orange rind, tie in a loose knot and drop into the drink. *This tall cool drink is best enjoyed sipped without a straw. Profile: Upon nosing the drink, there is the gentle fragrance of oils from the orange twist the first flavours are of mellow, citrus-flavoured Lillet, and spice from the Cognac and the cinnamon. The strength of the Cognac backs up the subtle nature of the wine-based Lillet. A dash of bitters serves to bind the personalities of the different ingredients together. Tonic adds to the flavour profile and lifts the character of the cocktail from brooding to refreshing. The final taste on the palate is the lingering of subtle cinnamon.
