End of the Abalone

Since his hire last summer as Executive Chef at Diva at the Met, Chef Quang Dang has been putting together some very creatively themed menus -- most of them intensely focused on local regional food items.

In September he wrapped a menu around rose wines that included BC scallops and blackberries. In October and November, he took BC heritage apples to new and scientifically glamourous levels. (See more on this in CityFood's Winter print issue.) However, Chef Dang may have just been handed his most interesting ingredient yet.

Thanks to his early and ongoing support, he's managed to snag Vancouver's only and last allotment of northern abalone from the Bamfield Huu-ay-aht Community Abalone Project.  ... CONTINUE READING...
