MARKET BY JEAN-GEORGES (VANCOUVER)  - THE MENUS


Jean-Georges Vongerichten has designed his new menus as a series of six columns starting with the raw bar items and ending with the vegetable sides. He says he planned it this way because he wanted to get away from the traditional 3 course meal idea and to encourage diners to order as many or as few items from any section of the menu that they desire.

At first glance, the most surprising thing about the menus are the prices. Considering the amount of expense that went into the room and the hi-talent staffing Vongerichten and the Shangri-La have gathered, we would have expected to see more items priced in the $30 to $45 dollar range. Instead, the most expensive item is the rack of lamb at $29. We're checking on whether all vegetables will be priced separately, or if this is purely an extra side dish charge. If it is the former, that would notch up the price point a fair amount. It not, then everything is a steal ... especially the Market Menu (prix fixe) selection of 6 courses for $65. (So is the lunch special of two plates and a dessert for $28.)

We talked to Jean-Georges this morning and he stated that the concept for his Market restaurants (the first one is in Paris) is basically a collection of "best hits" items from his other restaurants (Jean-Georges, Mercer Kitchen, Spice Market, etc.) with some tweaking to include regional ingredients and to reflect the input from his executive chefs. In this case, that would be Chef David Foot.

Dinner started last Saturday and lunch only commenced today, so the dishes may change in the next few days, but the menus posted here are what they are starting with.  (Due to difficulties getting our scanner to duplicate the fine print without making the pages appear to be yellow or dirty, we've posted them two ways. One as a flip book that can be magnified using the programs viewing controls,  and beneath that as standard scans.  The first two pages are the dinner menu, followed by the 2-page lunch menu and then lastly, the bar and casual bistro menu.
