ANNOUNCEMENTS - (May 29, 2008)

Another day, another tapas… Subeez says it plans to move the menu at its popular Howe Street hangout to a “new, 21st Century direction”. Under the guidance of Executive Chef, Kristof Gillese, (ex Fluid alumni), the kitchen has evolved towards more classic cooking techniques and small plates using prime, locally sourced ingredients. New menu items include “Granville Island beer braised boneless chuck ribs with chipotle-tequila barbecue sauce and Arrancini (baby mozzarella and risotto dumplings, fried on vodka marinated BC blackberries. “I wanted to create some of the most genuine food in the Lower Mainland”. Says Gillese.


A berry special market launch … The Farmers Market rolls into Granville Island again for the summer starting this June 5th. Longtime Granville Island resident, Ocean Concrete will unveil its brand new 'strawberry' concrete truck at the event. The public is invited to join in the festivities, enjoy complimentary strawberry ice cream provided by Rogers' Chocolates, and see the truck as it rolls into Triangle Square at 4:30 p.m. Granville Island will also be giving away new enviro bags at the Red Info Hut. After launch day, the Farmers market hours will be every Thursday, June through October, from 9 am to 3 pm. Find it at the parking lot east of the Public Market building.


Call your Dad a cheapsteak … For eleven days – June 5th to June 15th (Father’s Day) Hamilton Street Grill in Yaletown will featured 8 oz. certified Angus sirloin steak grilled to order, with garlic smashed potatoes and market fresh vegetables for a retro price of $11.

On Sunday, June 22, exactly one week after Father’s Day, the grilling experts at Morton’s The Steakhouse will present Grilling 101, the first in the Morton’s Master Class series. The lesson begins at 1 p.m. and is $99 per person (plus taxes). And how far will a hotel go to bolster its affiliation with 100-Mile cuisine? Well, the Fairmont Royal York in Toronto plans to supply their customer’s breakfast trays with honey from their own hives located in the hotel’s rooftop garden. Let's hope they also supply those little worker bees with lots of flowers so they don’t have to join the commuter traffic going in and out of the city to cottage country all summer.

ANNOUNCEMENTS - (May 21, 2008)


Whitecap Books was well represented at the Gourmand World Cookbook Awards held in April in London, England. The Definitive Guide to Canadian Artisanal and Fine Cheese by Gurth Pretty won first place in the category for Best Cheese Book. Wild Sweets Chocolate by Dominique and Cindy Duby was awarded a second place for Best Chocolate Book; Indulge by Claire Clark was awarded second place for Best Dessert Book; and Libations of Life by Dee Brun won third place for Best Spirit Book. Congratulatons to the authors.


Next up on Whitecap’s social calendar is a barbecue party to celebrate the launch of Memphis Blues Barbeque House: Bringin’ Southern BBQ Home, the new cookbook by Park Heffelfinger and George Siu, the men behind the successful Vancouver-based restaurant, Memphis Blues Barbeque House. The party takes place June 7, 1 – 3 p.m at Johnstones Barbecues & Parts, 165 Pemberton Ave, North Vancouver. The event is open to the public at no charge. Consider it an excellent opportunity to get an autographed copy of the book and taste some of the delicious recipes inside.


CityFood contributor Rhys Pender has just opened his own wine school in the Okanagan. Starting in September, WinePlus will offer the courses of the internationally recognized Wine and Spirit Education Trust (WSET) as well as traing programs designated for winery, retail and restaurant staff. Rhys has been instructing WSET courses since 2002. Course details and registration will be launched on www.wineplus.ca in mid-June 2008


Meanwhile, a former business associate of Rhys’, James Cluer of Fine Vintage Ltd., has just received his Master of Wine certification after an eleven year pursuit of the highly prestigious title. Congratulations James. The right to be called a Master of Wine is considered the pinnacle of qualification in wine, with just three people so designated in Canada, 25 in North America in total, and 265 worldwide. Sommelier Barb Philips of Vancouver was also recently certified as one of the three Canadian Masters of Wine, and is currently the only female Canadian MW.

Two BC wineries won top awards at the recent 28th All Canadian Wine Championships in Windsor Ontario. A total of 1045 wines were submitted from 152 wineries from Ontario, British Columbia, Quebec, Alberta and Atlantic Canada, Trophy Winners included Best Red Wine of the Year: Jackson-Triggs 2005 SunRock Meritage and Best White Wine of the Year: Wild Goose Vineyard, Mystic River Gewurztraminer .


For those following the trial of Ontario farmer Michael Schmidt and his struggles with the law in the “Raw Milk War”, the latest news is that his upcoming trial has been postponed. According to the release:

Though charges remain against Schmidt for the production, storage and distribution of non-pasteurized milk, Schmidt expressed optimism about the possibility of “working together on a solution,” and revealed that an olive branch had been extended by the prosecution team of the Ministry Of Natural Resources in the form of an offer to return all dairy equipment confiscated from Schmidt’s Glencolton Farms. Schmidt faces 20 charges laid by the Ministry and the Grey-Bruce Health Unit which carry sufficient fines to bankrupt his 20-year-old family institution. “Raw milk” is sought out by gourmet chefs for its flavor and by organic and “slow food” enthusiasts for its organic, “untouched” properties. In 2006, famed chef Jamie Kennedy took up Schmidt’s crusade, organizing a rally of urbanites against the province’s draconian pasteurization laws. In a recent poll on AM640, 92% of call-in listeners were in favour of the right to choose raw milk. It represented an unprecedented majority of listener votes on any issue at the station in recent memory.
 Meanwhile, Schmidt has made international headlines as the subject of a documentary, Michael Schmidt: Bioterrorist Or Organic Hero? which made its world premiere at the Slow Food Film Festival in Bologna, Italy, recently.”

And lastly, a message from Julian Bond of the Chef’s Table Society on the passing of Chef Soren Fakstorp:

Chef Soren Fakstorp, Chef Instructor, Walking Culinary Encyclopedia, Historian, Husband, Father & Friend passed away peacefully with his wife Cynthia and son Adrian at home on Monday, May 19th due to an invasive cancer. Our Danish friend came to Vancouver via Copenhagen, an apprenticeship with Roger Verge, a stint with Pierre Romeyer, then dropping in to South East Asia, Malaysia, Borneo and Hong Kong to name a few. During his four years as Corporate Chef for Club Corporation of America he took on, in more ways than one, a Miss Cynthia Fung as a lifelong wife and companion. Settling into Vancouver as Executive Chef for Seasons at the Park , Soren soon took on fatherhood , restaurant ownership, and opening chef for Harry KambolisC Restaurant before joining the instructors staff at Dubrulle International Culinary Institute. Chef Soren oversaw the celebrated ‘Chef’s Table’, our program's final step to the making of a cook. If you ask me, Chef Soren’s impact as a mentor can be felt city wide with every one of his cooks turned chef. Even though his goal was to one day complete a master chef program he leaves us a culinary master.

Here’s to a pig’s pass, a chinatown cassoulet, home-cured herring, play dates, a good Donald Duck impression, and some great memories dear friend. You'll be sorely missed.

In just over a week, the Island Chefs’ Collaborative in Victoria will be hosting their first big local food event “Defending our own Backyard". They invite you to come out and taste a bit of the island while learning what’s happening in the cuisine and agriculture scene on Vancouver Island. The event takes place Sunday afternoon, May 25 from noon until 4pm at Fort Rodd National Hill National Historic Site (map). A couple of very interesting women will soon be visiting Barbara-Jo’s Books to Cooks store just outside Granville Island. On May 23, BC-born author Kate Jacobs will attend a “Six O’Clock Salon event for her new novel Comfort Food, and will then follow that up with a book launch event in her hometown of Hope at the Blue Moose Café on Sunday, May 25th. In Comfort Food, Jacobs explores the popularity of cooking television and the rise of the ‘foodies’ through the fictional story of Augusta “Gus” Simpson, a celebrity TV cooking show host on the brink of turning 50, who is watching her hard-earned success take a downward turn. Jacobs earned earlier media attention with the release of her first book The Friday Night Knitting Club, the movie adaption of which which has been optioned by Universal Studios for a film starring Julia Roberts. Also coming soon to Barbara-Jos Books to Cooks for a cooking demo and book launch is Diana Kennedy. The famous cookbook authour and one of the world’s foremost experts on regional Mexican cuisine, Ms Kennedy has been awarded the Order of the Aztec Eagle - one of the highest honors in the country - for her service in promoting the arts and culture of Mexico.


For the next six to eight weeks, Raincity Grill will feature local spot prawns (delivered fresh daily by Organic Ocean’s Steve Johansen) on their newly released 100 Mile tasting menu. See more details and the complete menu here.


Just a reminder that Boneta restaurant in Gastown is now open for lunch from Tuesday through Saturday offering favourites from Chef Jeremie Bastien’s kitchen such as Bison Short Rib Dips with Obligatory Greens, Bacon & Egg Caesars with Homemade Worcestershire Sauce, his signature Poutine (full of cheese curd and gravy goodness), as well as a rotating line up of daily specials. Why pay $6.00/lb. for heirloom tomatoes (one tomato is usually one pound) at some local grocery stores when you can grow some yourself. Sharon Hanna, Slow Food member, avid gardener, and writer for GardenWise and Gardening Life Magazine will teach you how to grow your own tomatoes and other garden veggies by allocating part of your lawn area (a sunny spot) to grow food, using the ‘lasagna’ method of gardening. After creating your lasagna garden, you can plant immediately and enjoy a harvest this season. She will also have heirloom tomato seedlings for you to purchase to get you started. The seminar will take place Tuesday May 27th, from 7 p.m. to 9 p.m. at the Italian Cultural Centre – Room 5. Coming up in June ....


On June 14th and 15th, nine homes will open their gardens to ticket holders in a unique fundraiser for the VanDusen Gardens called “Secret Gardens”. This year’s collection of gardens presents a broad range of styles and plantings, from formal to romantic to aquatic to culinary in theme. Hart House at Deer Lake invites seafood lovers to kick off the summer season at its annual Lobster Supper. The supper will be held in the open air of Hart House’s estate on Wednesday, June 25 2008. The evening begins with an hour of wine sampling from a special list selected by Hart House’s resident sommelier. Guests may then choose to purchase a bottle or two of their favourite wines to pair with dinner. A buffet-style dinner featuring fresh Nova Scotia lobster will subsequently be served on the grounds of Hart House’s estate, which features an unparalleled view of tranquil Deer Lake. Congratulations to Brooke Winters, a graduate from the Culinary Arts Institute of Vancouver Island at Malaspina’s Nanaimo campus, who recently won a gold medal as Canada’s top junior cook at the Knorr Junior Culinary Competition in Montreal. Along with the gold medal, she received $2,000 and a trip to Erfurt, Germany to accompany Junior Culinary Team Canada in October 2008. Winters is currently employed at the Fairmont Empress in Victoria.


In only five years, Calgary-based Bellstar Hotels & Resorts has grown from just one resort under management in Canmore to nine resorts in operation, and seven more on the horizon in Alberta and British Columbia. (Within a few years, they expect to have more than a thousand resort condo units under management.) This summer will see the opening of two new resorts: Strand Lakeside Resort in Vernon, BC, and Blackstone Mountain Lodge in Canmore, Alberta; plus the completion of the Villas in Phase II of Spirit Ridge Vineyard Resort & Spa, (located next to the Nk’Mip Winery) in Osoyoos, BC. Vancouverites may remember Bellstar Exec VP Jon Zwickel as the former proprietor of Hot Dog Jonny's.

Two local women, Sarah Loewen and Tamsin Tarling, have just launched “Meals for Mums”, a healthy meal delivery service for families pressed for time to shop and cook. With the help of chefs specializing in holistic nutrition, Meals for Mums uses ingredients that are unmedicated and free of GMO, transfats, artificial colours or flavours. The food is kept insulated in a cooler bag with ice pack, so customers don’t need to be home for delivery.


Among other media kudos collected this year, Yaletown’s Blue Water Cafe+Raw Bar (1095 Hamilton Street) also boasts a mention in the Robb Report’s list of 100 favourite restaurants worldwide. Robb Report, is a 30 year old publication addressing the luxury travel market. Blue Water was one of only two Canadian restaurants to make the list along such other notable restaurants such as Charlie Trotter's (Chicago); El Bulli ( Spain); The French Laundry (Napa); and Le Gavroche (London).


Ryan Stone of the Marriott Pinnacle Hotel, Vancouver is the winner of the Bocuse d’Or 2011 National Selection Competition held in Montreal, Quebec, last week. Ryan will now represent Canada at the 2011 Bocuse d’Or World Cuisine Contest in Lyon, France. He will also accompany Chef David Wong – Canada’s Bocuse d’Or 2009 competitor – to the next Bocuse d’Or competition in Lyon, in January 2009. Let’s just say he knows what he is up against. Stone has a long history with the Bocuse d’Or competition. He was apprentice to Canadian candidate Morgan Wilson in 2005 and was the apprentice assistant to Scott Jaegar in the Canadian Selection Competition that resulted in Scott’s nomination as the 2007 Canadian Bocuse d’Or candidate.

BC Spot Prawns hit the dock at Granville Island’s Fishermen’s Wharf Saturday, on May 3rd and for the rest of the month, special spot prawn menus will be featured restaurants across the city. Chef Ian Lai, the founding director for the Terra Nova Schoolyard Society and the Market’s resident chef will be the first presenter in the series. May 23-25: Wild Salmon Questions Answered at the Eat! Vancouver Show.
The first wild chinook or spring salmon of the season are now making an appearance in our market places. With conflicting reports in the local media concerning the sustainability of wild salmon, fans of the fish naturally want to know what, when and how much of each of the five wild BC salmon species will be available this season. The BC Salmon Marketing Council, a non-profit generic marketing organization for wild BC salmon funded by the BC commercial fishermen, plan to answer questions from the public with a community event appearance at the EAT! Vancouver Show, May 23rd to May 25th at BC Place Stadium. Special guests at the Wild BC Salmon Booth will include Robert Clark, Executive Chef of C Restaurant, Nu Restaurant and Raincity Grill; Karen Barnaby, Executive Chef of the Fish House in Stanley Park; and, Barbecue Champion Ron Shewchuk.

May 19: Lauren Bush Goes Green at Capers - * EVENT CANCELLED *
Capers Whole Foods Market is hosting Lauren Bush - fashion model, niece of President George W. Bush and co-founder and CEO of FEED Projects - at the West End Robson Street location for the launch her FEED 100 bag and to speak about FEED global projects to relieve child hunger. Each purchase of a FEED 100 bag, which retails for $29.99 and was designed exclusively by Bush for Capers Whole Foods Market, provides 100 healthy school meals for hungry children in Rwanda. FEED was founded by Lauren Bush and Ellen Gustafson through the inspiration from the World Food Program’s School Feeding Program.

June 12: Project Empty Bowl
During A Loving Spoonful’s 7th Annual Project Empty Bowl, guests will be given a hand-crafted souvenir bowl, created by Rachelle Chinnery, to be filled with a variety of innovative west coast creations available at chef attended stations placed throughout the event. Menu highlights include farm fresh vegetable and local seafood risottos. The event which includes the auction of $40,00 of original art and collectibles, will take place at 6: 30 p.m. on the Mezanine Level of the Pacific Pallisades Hotel (1277 Robson Street.
