Irish Cahill Porter Cheddar is a beautiful marbled cheese made by Dave and Marion Cahill in County Limerick , Ireland . Individually handmade using the milk of Holstein Fresian cows, the Cahill family pours Guinness Stout over this tangy cheddar giving the cheese a mosaic-like pattern. Developed by Irishman John Lucey, this secret recipe is exclusively held by the company Carbery. Dubliner is a sweet mature cheese that is aged 12+ months. CASHEL BLUE
Cashel Blue is produced by the Grubb family near Tipperary County, Ireland. Serendipitously made, the cheese was a genius solution to dealing with the vast amount of milk produced by their huge herd of cows. With its earthy taste and creamy texture, Cashel Blue's exceptional flavor is the result of well-tended cows and a dedication to the art of cheese making. Cashel Blue is excellent as a dessert course when paired with a vintage port wine, Sauternes or a BC late harvest sweet wine like Quails Gate Optima.
