GUINNESS CHEDDAR

Irish Cahill Porter Cheddar is a beautiful marbled cheese made by Dave and Marion Cahill in County Limerick , Ireland . Individually handmade using the milk of Holstein Fresian cows, the Cahill family pours Guinness Stout over this tangy cheddar giving the cheese a mosaic-like pattern. To pair with wine, look for light fruity reds like Pinot Noir. They hold their own next to this bold and flavorful cheese. Naturally, stouts and porter ales taste great too. Price: $3.50/100 gr






DUBLINER


Developed by Irishman John Lucey, this secret recipe is exclusively held by the company Carbery. Dubliner is a sweet mature cheese that is aged 12+ months. Named after the city of Dublin, it has a robust flavor with a distinctive tang. Dubliner may contain natural calcium lactate crystals, these appear as small white pieces. Price: $2.50/100 gr








CASHEL BLUE


Cashel Blue is produced by the Grubb family near Tipperary County, Ireland. Serendipitously made, the cheese was a genius solution to dealing with the vast amount of milk produced by their huge herd of cows. With its earthy taste and creamy texture, Cashel Blue's exceptional flavor is the result of well-tended cows and a dedication to the art of cheese making. Cashel Blue is excellent as a dessert course when paired with a vintage port wine, Sauternes or a BC late harvest sweet wine like Quails Gate Optima. Also try serving it with a sweet fruit preserve such as our fig and raisin confiture from Provence. Price: $4.25/100 gr
