Araxi's 100 Mile Menu conjures all the ingredients for an extraordinary meal

Whistler, BC – Executive Chef James Walt is proud to offer Whistler’s first 100 Mile Menu where every ingredient was sourced, raised, produced or grown from within a
100 mile (160 kilometre) radius.

Walt applied his market-driven approach and resident knowledge of the Pemberton farming community to craft the multi-course prix-fixe menu. "We relished the task and it was very rewarding as well," says Walt. "We have created new relationships and enhanced some that have been in place for years, especially those with the farms of the Pemberton Valley."

Entirely determined by what is being harvested at the moment, guests will be able to
choose from dishes such as:

- North Arm Farm pumpkin soup with toasted Aldergrove hazelnuts and rosemary cream
- Pitt Meadows lamb with assorted baby carrots, Fraser Valley mushrooms and rainbow chard
- Qualicum Beach scallops with North Arm Farm peaches and cream corn
with braised leeks and beurre rouge

The first and only Whistler chef to cook at New York’s celebrated James Beard House (1998, 2002, 2006), Walt’s impressive culinary career spans some of British Columbia's leading restaurants. A prestigious appointment as Executive Chef to The Canadian Embassy in Rome significantly influenced the way he cooks today. "The European market culture has inspired me to cook even more regionally and seasonally," says Walt. "There, if it's not in season locally, it's simply not available. Everything is sold at its prime so you're able to
shop daily and be creative and spontaneous."

Offered in conjunction with Whistler’s Dine and Unwind promotion until November 29th, this exceptional multi-course menu is available for $45.00
Sunday through Friday for parties of up to eight people.

Winemaker's Dinner: Araxi + Kendall-Jackson
Friday, November 9th, 7:00 PM, Price $295 per person

Whistler's culinary cornerstone, Araxi and California's most awarded winery group, Kendall-Jackson are combining forces to present an exclusive multi-course dinner expertly paired with an extraordinary line up of wines. The exciting collection will include critically acclaimed labels and rare vintages from limited production varietals including those from the Highlands Estates and Stature "the pinnacle of Kendall-Jackson’s experience,
effort and intent."

Executive Chef James Walt will craft the menu to capture the subtle nuances of each wine and the terroir of its vineyard site, showcasing the pristine ingredients from nearby
Pemberton Valley Farms and the Pacific Ocean.

In celebration of Kendall-Jackson's 25th Anniversary, Araxi will welcome esteemed winemaster Randy Ullom and Pulitzer Prize nominated photographer George Rose.
Ullom will introduce the wines for each course, providing engaging commentary about the winemaking process and distinct growing conditions at each Kendall-Jackson vineyard.
