Trevor White Endorses C's Lobster Bisque

Vancouver, BC… In town to promote his book Kitchen Con: Writing on the Restaurant Racket, Irish author Trevor White dished on Vancouver dining. Of C Restaurant, White raved (as quoted by Mia Stainsby of the Vancouver Sun)“I had the halibut and it was super. The lobster bisque was so rich, a person could leave his wife for it. (Not to worry, White is not married) It was full of flavour. Lobster bisque often promises a great deal but doesn’t deliver. This one blew me away. You can say it’s the best I’ve had. And the service? It was really, really, really, really good.�

Chef de Cuisine Quang Dang joined the kitchen crew at C Restaurant six months ago and has been adding his own style to C’s signature dishes ever since. This summer, following the success of his Spot Prawn menu, Chef Dang will continue to focus on local sustainable seafood. Be on the lookout for more seasonal menus – up next is Dungeness Crab.

Born in Dublin, Trevor White grew up in the restaurant industry. At the age of 18, White decided to use the success of his parents’ French restaurant to secure a job with small local newspaper doing none other than writing restaurant reviews. Since then, White has been a freelance journalist in Cape Town, Prague, Bermuda and New York, the Features Editor for Food & Wine magazine, the Senior Editor of America’s Elite 1000, and in 2000, launched The Dubliner, an intelligent, eclectic city magazine. In his new book, Kitchen Con, White charts a journey from the dining room to the kitchen; from proud ignorance to a tentative determination. In this candid, absorbing account of life at the heart of the restaurant racket, he reveals the forces at work in the restaurant world, from the criminal antics of chefs to the real identity of the food fascists.
