New Chef for the Wickaninnish Inn in Tofino
NEW CHEF AT THE WICKANINNISH INN - CHEF DE CUISINE TIM CUFF (Directly from the Press Release)
(Tofino, BC) Charles McDiarmid and the management team at the Wickaninnish Inn are delighted to announce that Chef Tim Cuff is the new Chef de Cuisine at the renowned Pointe Restaurant. Chef Cuff will take on this new role starting April 1st, 2007.
Tim Cuff comes to the Wickaninnish Inn after an exciting and varied career which has taken him from Calgary’s Teatro Restaurant to Bavaria, Germany and back to B.C. For the last 3½ years, Chef has been leading the culinary team at Mission Hill Family Estate Winery in Westbank, BC along with his mentor and good friend Chef Michael Allemeier. Having worked in the lush Okanagan Valley, Tim has come to fully appreciate local, organic and seasonal ingredients. He skillfully incorporates these elements into the unforgettable dining experiences he creates for his guests. Like the Chefs of the Pointe Restaurant before him, Chef de Cuisine Tim Cuff will continue to draw from the bountiful produce, seafood, game and products produced on Vancouver Island to deliver unparalleled culinary delights for the guests of the Pointe Restaurant at the Inn.
Tim is excited about his move to the rugged west coast of Vancouver Island. He says, "The performance standards at the Wick are very high, and I am looking forward to this challenge. However, the most exciting element of this move to Tofino is knowing that the bountiful waters of Clayoquot Sound are at our doorstep.
Chef de Cuisine Andrew Springett was instrumental in choosing his replacement at the Inn. Chef Andrew worked with a variety of wonderful chefs throughout the selection process. In the end, the management team at the Inn felt Tim’s passion for food, his drive for exceptional experiences and his creativity with product would make him the perfect leader for the kitchen brigade at the Pointe. Andrew has chosen to go on to exciting new projects around the province of B.C. Charles McDiarmid says “Andrew’s spirit and talents will be missed at the Inn. However, like Chef Rod Butters before him, Andrew will always be part of the Wick’s strong culinary tradition and he will continue to work with the team at the Inn. “ -- Jane Ince
