Vancouver Community College Wins CTS Challenge

VANCOUVER COMMUNITY COLLEGE WINS $5,000 SCHOLORSHIP AT THE CHEFS' TABLE SOCIETY FIRST ANNUAL CULINARY CHALLENGE
(Directly from the press release)

(Vancouver, BC) - The Chefs’ Table Society of BC is pleased to announce that Vancouver Community College took first place at the First Annual CTS Culinary Challenge. The event took place on Monday February 19th at the Terminal City Club in Vancouver, where Vancouver’s leading culinary schools competed to win a $5,000 scholarship from the Chefs’ Table Society for their school. Participating schools included: the Pacific Institute of Culinary Arts; the Northwest Culinary Academy of Vancouver; the Art Institute of Vancouver – Dubrulle Culinary Arts, and Vancouver Community College.

Over 130 of Vancouver’s top chefs, suppliers and restaurateurs gathered to cheer on these emerging young professionals, who were judged by a panel comprising John Bishop (Bishop’s), Rob Clark (C/Nu/Ranicity Grill), Pino Posteraro (Cioppino’s), and Bruno Marti (La Belle Auberge). Judging was based on presentation, professional techniques and skills, taste profiles, and use of local ingredients.

Accepting top honours, the student team from Vancouver Community College wowed the judges and the sold out crowd with three creative and delicious canapés: Kushi oysters smoked with star anise, with a pickled ginger watermelon garnish; a spot prawn and Chinese mushroom globe, with daikon tempura and spiced tobiko mayonnaise; and a mini tuna nicoise salad served with albacore tuna tartare, bean, anchovy, olives, poached quail egg and herbs.

The Chefs’ Table Society of British Columbia is a collaborative dedicated to creating a foundation for the exchange of information between culinary professionals throughout the province. The society supports innovative and sustainable programs that will inspire, educate and nurture our chefs, our producers and our local food industry.
