FISH & CHIPS WITH A GREEN TWIST IN VICTORIA

Victoria, BC…. This week, Red Fish Blue Fish opens on Victoria’s Inner Harbour. The project of chef Kunal Ghose, business manager Simon Sobolewski, fisherman Steve Johansen and designer Barbara Houston, Red Fish Blue Fish is located at the foot of Wharf Street (1006) on the Broughton Street Pier. This seafood taqueria, managed by April Ollen, offers 100% Ocean Wise sanctioned local fish including Pacific halibut, wild salmon, albacore tuna, Qualicum scallops and Fanny Bay oysters.

Housed in a used sea bin (cargo container), Red Fish Blue Fish aims to reduce its entire footprint. All food service materials are made from potato starch and are either compostable or recyclable. The green roof is topped with soil and will grow sedums. All food waste will be removed by reFUSE Food Waste. Red Fish Blue Fish prides itself on using 100% sustainably harvested seafood; seafood suppliers include Organic Ocean Seafood and Finest at Sea.

Chef Kunal Ghose was most recently employed at Vancouver’s Go Fish. Featured on his menu at Red Fish Blue Fish will be seafood sandwiches on Portuguese buns, fish tacones - grilled tortilla hand rolls (taco-cones), wild Pacific fish & chips or your choice of fish on the BBQ; hand cut, twice cooked Kennebec fries; house made slaw; salads of La Retraite Farm organic greens with dill'd Caesar vinaigrette; Pacific Rim Chowder (Chipotle coconut + sweet corn with sweet garlic'd pacific white fish confit).
