BAO WOWS DOG DAYS OF SUMMER

(Vancouver, BC) – Most cultures have them – whether they’re called won ton, purses, tortellini, perogi, bao or gyoza, the dumpling is one of those foods that trace its origins to home cooking. They come in a myriad of shapes, sizes and forms – most are savory, but some are sweet. What they share in common is that they are universally loved.

This summer, in time for the dog days of August, Wild Rice restaurant will present a table d’hôte menu of a different sort. Priced at $30 per person, the Dumpling Tasting is a celebration of all things dumpling. Created by restaurant chefs Ryan Mah and Chris Chabot, the menu features a five-course dumpling sampler. Owner Andrew Wong has designed an optional wine flight pairing (priced at $20) to accompany the five dumpling courses.

These are not ordinary dumplings. "Our intention is to elevate the form. We’re offering one with wild mushroom ragoût and truffle oil while another contains duck confit and another smoked black cod," says Wong. "Chris and Ryan have created dumplings that are light, yet filling. Every course leads the palate into the next and we finish with a sweet dumpling of seasonal berries."

The restaurant is so committed to expanding its dumpling repertoire, that it will close from August 1 through 7th to re-configure its kitchen to house a special dumpling station. Master dumpling maker Wing Leung, who has worked with Wild Rice on a part-time basis since its inception, has been engaged full-time to work with Chefs Mah and Chabot.

The new menu will be launched when Wild Rice re-opens on August 8th and will run through September.
