January 24th, 2006 (Vancouver, BC) The Smoking Dog Bistro, owners Jean Séguin and Judith Andrews, are pleased to announce that renowned chef, Scott Baechler has joined them as Chef Consultant.

Scott Baechler is a 20-year veteran of some of the top kitchens in the world. His impressive resume is filled with accolades and awards crossing continents. Career highlights include Executive Chef, the Metropolitan Hotel (Diva at the Met), Vancouver; Executive Chef, The Fairmont Hotel, Dubai and most recently Executive Chef of the Four Seasons Hotel, Whistler.

On working with Scott, owner Jean Séguin notes “Scott will be a hands-on chef who will work with our staff to make the improvements we want to take the restaurant forward. He will be ensuring quality and consistency, and most importantly simplifying the menu, taking it back to its French brassiere roots�

Now full time at the Smoking Dog Bistro, Scott is working with kitchen staff on recipe development and ingredient sourcing, while ensuring the kitchen is a fun, creative and cohesive environment to work in. “His role is to make us all better, and when he eventually leaves, we hope to see the current kitchen team ready to take over where he left off. Jude and I are excited to be working with Scott and look forward to everything we can learn from him.�

The Smoking Dog Bistro is a small French brassiere opened in 1996 in Vancouver’s Kitsilano. When owners Jean Séguin and Judith Andrews, two of the restaurants most devoted customers, purchased the restaurant in 2005 loyal clientele remained and new local customers came filling the restaurants nightly. Now a bustling, comfortable neighbourhood bistro, Jean and Jude look forward to further growth as well as a return to its simpler French brassiere roots in the cooking.
