RAINCITY GRILL ANNOUNCES NEW CHEF DE CUISINE - PETER ROBERTSON

Vancouver, BC… Harry Kambolis is pleased to introduce Peter Robertson as the new Chef de Cuisine at Raincity Grill.

Robertson advancement within the company has been rapid. He begin as sous chef at Raincity Grill's sister restaurant, C, within one week of Quang Dang's arrival at that restaurant as Chef de Cusine, and moved on to the position of Chef de Cuisine at Raincity Grill only two weeks ago.

For Harry Kambolis, the owner of both restaurants, the policy of promoting in-house is consistent with the course Kambolis sets for his team and the company's philosophy of providing staff incentives and encouraging career development. Previous chefs who have filled the chef de cuisine position at Raincity have included Sean Cousins and Andrea Carlson. Cousins was sous chef to Executive Chef Robert Clark from 1998 to 2001, after which he was promoted to Chef at Raincity Grill. Carlson worked with C Restaurant for several years, both as pastry chef and sous chef, until she took over the helm at Raincity Grill early in 2005.

“I find that advancing staff within the company is a win-win for all," states Kambolis. "We have personnel that are constantly challenging themselves to be more creative and do a better job. At the same time, we maintain a culture within the three restaurants that is based on familiarity of philosophies and procedures."

Robertson originally hails from Sydney, Australia. A position as junior sous chef with Tony Bilson, known as the "Godfather of Local Cuisine" in Australia, was the start of a culinary education which has seen him employed at many internationally known restaurants. Stages at the 3-Michelin starred The Fat Duck in Britian (voted best restaurant in the world 2005), and Tom Aikens (currently one of the more progressive restaurants in London), whetted Robertson's desire to learn about local cuisines in other countries.

Says Robertson, “In 2005 I took some time off from my position at Bilson’s to travel to London and stage at a couple of restaurants I was interested in. While working there, a number of Canadian chefs stood out as being very talented. It became apparent that some of the world's most progressive and exciting cuisine is currently coming out of Vancouver and I am thrilled to be a part of this dynamic culinary scene.�

Raincity Grill restaurant has earned a reputation for working with small lot farms around BC that are dedicated to producing local, regional and seasonally fresh products. Chef Robertson continues the tradition with a "100 Mile Menu" based on fall foraging. This menu features mushrooms, root vegetables, cheese, nuts and other delights from the Fraser Valley, Pemberton region and Gulf Islands -- all expertly paired with Brent Hayman’s choices of 100 Mile BC wines.

The five course menu is available for $62.00 person or $97.00 with suggested wines.
