CINCIN APPOINTS NEW EXECUTIVE CHEF MARK PERRIER

Vancouver, BC – Jack Evrensel is pleased to announce the appointment of Mark Perrier as the new Executive Chef of CinCin: “Mark is a tremendous talent. His fresh perspective, innovative style and drive to continuously improve will bring a new dimension to our guests’ overall dining experience.�

A new shining star in the culinary scene, Perrier refined his skills in some of Vancouver and Europe’s top dining rooms. Enticed by the exquisite dishes, gleaming kitchen and rhythmatic flow of Chef David Hawksworth’s brigade, Perrier secured a position at West following his graduation from Vancouver’s Pacific Institute of Culinary Arts in 2001. His natural flair for cooking soon earned him a promotion to Sous Chef and win for Dubrulle’s Rising Star Black Box Competition.

Inspired by Chef Hawksworth’s influential tutelage, Perrier landed an apprenticeship in London, England with famed Chef Michel Roux Jr. (with help from CinCin’s Chef Patisserie Thierry Busset) at his celebrated two star Michelin restaurant, Le Gavroche.

Now back in Vancouver and at the helm of CinCin’s wood fired kitchen, Perrier joins Michelin-starred Busset and Restaurant Director Edwyn Kumar to produce a force of performance, professionalism and passion.

An ingredient-driven seasonal focus sets the tone for Perrier’s menu, with a repertoire of exciting new dishes including Whole Grilled Mediterranean Sea Bass, Wood Roasted Spatchcock Quail and Sage-braised Fraser Valley Rabbit.

THE MEDIA HOUND


In Today's Globe and Mail, Alexandra Gill ogles the Goldfish - bowl, but yawns at the food. As she points out, it's not that sort of place anyway, but perhaps her most amusing revelation about the restaurant is that they are posting pictures of local restaurant reviewers in the cloakroom. So why didn't the staff just take a good look at them when almost all were invited in to hold hands with Bud Kanke for the pre-opening celebrations?

Ah well, as one shark in the water we once knew used to say: "if you can't impress them, hire them." If you absolutely must need "10 Reasons to Love Goldfish", the gals at Vitamin V have provided them. And we are sure the little fact that the website editor's husband was the consultant for the Goldfish menu, and that the website's publisher also just happens to be the public relations person for the Kanke organization had absolutely nothing to do with their take on the restaurant at all. It only just looks that way.

The Regional Events Calendar has expanded.

We hope you had a very enjoyable Canada Day weekend. We took the three day opportunity to hitch around British Columbia and pick up over 50 NEW EVENTS to update our Culinary Calendars for the summer. Whew! And we have a feeling there will still be a lot more to come -- especially in the Okanagan. What ever happened to the "lazy daze of summer"? Remember when this used to be the slow season with few dates to have to jot down in our daytimers? Remember daytimers? Well, that's all in the past now. There are so many things happening over the next three months, it's going to be tough scheduling in that hammock time.

Because we know that Vancouverites will want to get out of the big smoke and spend some time at other points around the province, we've separated the information by region.

Of course as usual we will also use the EVENTS section to store DAILY and MONTHLY ITEMS, and if it is just a specific type of event you are looking for, such as food festivals or wine tastings, you can consult the TICKET LADY (Events by Region) and she will show you where these lists are maintained in the other sections.

We will keep adding to all these data banks as the information comes our way. And for all of you out there who did the patriotic thing this weekend and skipped down to the States to purchase an iPhone, we've added a Google map link to every listing too. So now there is no excuse not to get out and participate, right?

OPENINGS!

Boneta has opened its doors and is serving dinner on Tuesday through Saturday starting at 5:30 p.m., as well as expletive expressions for lunch on Fridays at noon.

And although in Gastown, parking is either a myth or a slice of urban adventure, at Boneta you can leave all the worrying about your car to the complimentary valet. Hey, we'd even be grateful for an insulting one.
