DINE AND DASH - (January 31, 2009) Opens a restaurant, makes a pot full of authentic Alsace choucroute and then goes skiing. Just a typical 24 hours in the life of the indefatigable Jean-Georges Vongerichten. As we mentioned earlier, the global chef has noted his Vancouver experiences in his blog at www.jeangeorges.blogspot.com. And yes, the source of ingredients for his choucroute was Oyama Sausage at Granville Island, whose products JGV praised for their high quality. The interior or Vongerichten's restaurant, MARKET by Jean-Georges, was designed by Box Interiors. Here's what they have to say on their website about their next project, the new Coast Restaurant, which will move this year from its current Yaletown location to a larger one downtown: " The evolution of this popular Yaletown restaurant will see it moved to Alberni Street, doubling its current size, and establishing itself as the downtown core’s new favourite gathering place for drinks, lunch, and dinner. A double level space, the high-energy ground floor will give way to the warm and intimate mezzanine, complete with private dining rooms and signature central ‘boardroom table’. DINE AND DASH - ( January 28, 2009) After working everyday to open MARKET since his arrival in Vancouver, one might wonder what Jean-Georges Vongerichten choose to do in our city on his one day off. Apparently, he went skiing at Grouse Mountain, and enjoyed himself so much he stayed on for the night skiing. He says he is looking forward to trying the slopes at Whistler on his next trip. We guess that, and his soba noodle diet, answers the question of how he stays so slim around all that great food. Keep your eye on his blog at www.jeangeorges.com. The next thing he plans to write about is his experience of opening a restaurant in Vancouver. Chef Neil Wyles of Hamilton Street Grill has become a Dairy King. Yes, he just opened his first franchise of a Dairy Queen last weekend at the corner of 43 and Fraser. "It was the easiest [business venture] I've ever done", says Wyles. "Construction, financing .... it practically built itself ... and", he added happily, "it makes MONEY!!" Sounds like he is on to something. Perhaps in these times we all need a Dairy Queen or a Mike's Hard Lemonade on the side to help keep alive the things we do for love, art and pride of profession. This spring our Chefs are going Euro, both here at home and abroad. Sean Heather ( Salt Tasting Room, Irish Heather) is off to Spain in March, and come April, chefs Adam Pegg and Lucais Syme of Le Quercia are closing shop and taking their families to Italy for a month. Let's hope they can sneak past the beagle at VIA and tote home lots of good edibles in their suitcases. If you think you are depressed by the economy right now, we have it on good authority that chefs in Seattle are feeling even worse ... and so are some of the people they used to do business with. The rumour is that the Seattle P I newspaper may be going down the tubes if Hearst can't find a buyer within the next several weeks (not likely), which will put 170 people out of work. This was certainly the case at last night's 2nd Annual Founders Dinner for the Hospitality Industry Foundation, when 300 people crowded into the ballroom at the Renaissance Vancouver Hotel Harbourside. OPENINGS - ( January 23, 2009) MARKET BY JEAN-GEORGES. Last week it was Arizona, and next it will be Dubai, but this weekend, the latest restaurant to open in Chef Jean-Georges Vongerichten's expanding empire is right here in Vancouver. Market by Jean-Georges begins taking reservations for dinner this weekend (Saturday, January 24, 2009), and in a very non Vancouver-like fashion, it's opening right on time. As of this afternoon however, when we take these snapshots, the place is still bustling with work crews, all of them trucking furniture about, cleaning glass, wiring lights in, etc. Even the Shangri-la Hotel brass can't resist stopping every couple of minutes to plump pillows on the lounge settees or realign the coffee tables. One stops to give a massive tropical flower display a 2 degree tweak to the left; the next passerby gives it a 4 degree to the right. Meanwhile, the man himself, Mr. JGV is downstairs at the Urban Fare, hurrying to pick up a last minute shopping list of ingredients. Amusing observation ... for a store supposedly devoted to foodies, not one customer or staffer recognizes him. For certain the restaurant's first customers will do better. DINE AND DASH - (January 19, 2009)
The next culinary addition to Vancouver's Crosstown area is likely to be a cooking school. The Dirty Apron Cooking School, operated by David Robertson (Chef de Cuisine at Chambar) in partnership with Chambar owners Nico and Karri Schuerman, is due to open this summer at 540 Beatty Street, close to Chambar and Medina Cafe. A website is in the works but it is not up and running yet. You can see a thumbnail of it here. Perhaps someday Dirty Apron will get together with Dirty Laundry winery and it will all come out in the wash. Chef on the run ... a little birdie told us that Chef David Hawksworth ( Hotel Georgia) has signed up to do the Vancouver Marathon this year. The run takes place on May 3rd, 2009, and is 42 kilometers or about 26 miles long. ... MORE DINE AND DASH HERE...

RESTAURANT NEWS - (January 15, 2009) VANCOUVER CHINESE RESTAURANT AWARDS 2009
The First Annual Vancouver Chinese Restaurant Awards were presented yesterday in a high tech stage and presentation area at the Edgewater Casino (in BC Place.) And just as the Chinese are known for getting down to business, chop, chop, it was a smooth and efficiently run proceeding. As well it needed to be, because beyond the generous amount of love provided for the sponsors, there were some 35 awards to be handed out in less than two hours. As presenter B.C. Lee instructed the winners: "When your name is called, run to the podium. We want no Oscar-style speeches here. Just accept your award and be happy." ... CONTINUE READING...

DINE AND DASH - (January 13, 2008) UPDATED - (January 14, 2008)
Check those Philly steaks, Executive Chef Rapheal Gonzalez, the Miami-born chef who opened Yew Restaurant + Bar for the Four Seasons Vancouver Hotel has been transferred to Philadelphia.
Rotating executive chefs throughout the Four Seasons empire every three to five years is a standard policy for the international hotel chain, and in his tour of duty, Gonzalez has already clocked kitchen time at such company flagships as the Pierre Hotel in New York. However, the local foodsters in Philadelphia seem a little miffed that the property in their city did not hire up through the kitchen ranks. Read their comments here.
The question remains as to who will fill Gonzalez' clogs in Vancouver. Turns out he is one of the three Hawaiian-based chefs who are currently in town to present a Hawaiian themed menu at Yew this week. Oliver Beckert is German-born and he was most recently based at the Four Seasons Resort in Lana'i. Here's his bio from the Lana'i hotel.
[Just from the look of their photos, one might wonder if the Four Seasons chain has a chef cloning station somewhere. We haven't seen such chef lookalikes since the two brothers who launched the original Kolachy Shop.]

DINE AND DASH - (January 12, 2008)
It seems that everyone is cutting back these days, and rumour says the latest to trim their sails is CityTV. Apparently, after seven years of broadcasting, the Vancouver television station plans to axe its CityCooks program, with the last show airing on January 25th. According to the rumbledrome, the featured restaurants were not terribly keen on the taping hours, nor the fact that they were required to provide all the cooking supplies. However, in a competitive era of local, celebrity chefs, the show was seen as good venue for exposure. Which it was. Over the years the show was sold to other areas (such as Calgary, Edmonton, and Barrie, Ontario, as well as in Asia), so it did succeed in alerting a geographically wider audience to the fact that we enjoy an excellent and varied dining scene here in Vancouver. But not all has gone into the garburator. Some airtime on "Lunch Television" (which begins airing today) will still be devoted to cooking segments, as well as on the existing Breakfast Television.
Rhys Pender, a regular CityFood Magazine contributor and a guy who just might be able to claim the title of "youngest Master of Wine in Canada" as early as this fall, tells us he'll be in New York for a few days next week to tape a segment of www.WinelibraryTV.com. He'll be on the abrasive but popular internet wine show to talk about BC wines.
As Vancouver Dine Out begins, it is interesting to note that the city's restaurants have divided themselves into three camps. 1) Those who couldn't wait for the two week January program to begin and who offered their discount menus early (somewhat like the department stores who started hanging their Christmas decorations in September); 2) those who are treating it as business as usual; and 3) those who are giving the whole business the sign of the cross. In the third category this year is Chambar who have opted out, siting a need to protect their regular clientele from the "limited menu choices, surly service staff and quick table turnarounds" that are some of the repeated complaints about the annual city restaurant promotion. With line ups every weekend for brunch at their Medina Cafe next door, plus a regular full house in the main dining room, Chambar doesn't need to price down. The Belgian/Moroccan style restaurant also has news about a recent renovation that has seen a wall removed to accommodate a 10-foot-high Egyptian door leading to a 40-seat overflow dining area at the back of the restaurant. The new section features long banquettes and massive windows overlooking the Vancouver skyline ... (and T&T sidewalk specials.)

FOOD TRENDS FOR 2009 - FOOD MAPPING ( January 9, 2009) Take a look at the photo on the left. Does it get you salivating? Does it make you want to run down to the restaurant that made it and order a plate full? Probably not, but it is a popular dish. It's the black spaghetti as created by Mario Batali for his Babbo restaurant in New York, and he sells a lot of it. Although he wouldn't if it were up to this picture to carry the dish from kitchen to cash register. Which points out the biggest potential flaw in a new form of internet marketing that has been fully conceptualized over at EatBite.com -- the fact that although pictures of its food are used to flag a restaurant and attract customers to it, the restaurant does not control the photos selected, the customers do. MILESTONES - ( JANUARY 5, 2009) CHEF RAMAN ANAND PASSES AWAYThis just in from Elaine Dever of The Sutton Place Hotel: Dear friends It is with a heavy heart and great grief that I am reporting to you the death of our esteemed Restaurant Chef, and to most, our dear friend, Raman Anand, who passed away suddenly on Friday, January 2nd of a heart attack at the age of 34. Raman has been a member of The Sutton Place Hotel family since August 23rd, 1999. During this time he received many accolades and accomplishments, most recently being awarded a Gold Medal at the World Culinary Olympics in Erfurt, Germany with the rest of the Culinary Team of BC on which he held a position. He was a delight and an inspiration to all who were fortunate enough to have worked with him and he shared with us his incredible creativity, talent, and passion for cooking. We are all very proud to have had the opportunity to work alongside Raman and he will be deeply missed by all of us. Our hearts reach out now to his family, friends and all who were close to him. Great for those Euro-dashers who could use the family helicopter to pick up the milk. As the saying goes: "cash is like oxygen for businesses". Which must mean that Brick Brewing Company is breathing much easier now that the Ontario government has shelled out a cool million of the taxpayers' dollars to help give the brewery a leg up over the competition (a large percentage will go to aggressive marketing campaigns). In a scenario that would make Ayn Rand want to put her head in the oven, Brick is the same company that was declaring itself to be in serious financial difficulties only this fall. ADDITIONS - (January 5, 2009) IT'S A NEW YEAR AND WE'RE STILL FLIPPING
We're still working on that promise to get the past archive of CityFood Magazines online. Not the whole 100+ issues we've published since 1992 mind you, but still a good number of them. This new technology is much more approachable than the version we pioneered back in Spring 2007, but it's not an exact science yet. There are still linking issues we need to resolve (things that have to do with Firefox incompatibility with the software, as well as locks placed on the original PDF artwork for many of the advertisements), but we're working on getting around that and will make sure it's not an issue with new magazines.
Besides the most recent magazine, we've added a digital version of a much requested past issue, The "Food & Art Issue" of 2088, which you will find above as well as on its own page in the Archive Section.
Because these pages were designed to be seen on a large tabloid page, not a computer screen, they are easiest to read if you use the full screen mode. (Look for the double arrow symbol on the top of the flipbook page), and don't forget you can magnify any page or download it if you prefer to read it later. The keyword search function for each issue appears to be working well too.

WHAT WE'RE READING NOW - ( January 1, 2009) We've made our New Year's resolutions, including a list of those books and articles we've been meaning to read but never got around to in 2008 -- starting with the Economist, a magazine we enjoy, but one that usually requires a barter session with the Devil each week if we ever hope to finish an issue. So here's a few highlights. Like charms in a plum pudding, in its double year end edition, the editors managed to tuck a few culinary gems among their usual preference for more weighty ingredients, beginning with an essay on the real purpose of cookbooks. (We didn't know that the singer Tom Jones had written a cookery book, did you? ) Pluck a Flamingo: " Nigel Slater dislikes recipes. In his cookbook 'Appetite' he compares them to a straitjacket and a pair of too-tight cycling shorts..". The Way the Brain Buys: The sinister reason why all modern supermarkets look the way they do. Gem of the Oceans: An ode to the oyster and a pint of Guinness. Food for Thought: What was once a Barilla pasta factory may become Europe's most important cookbook library. --- and over at the New York Times ... She Got a Kick From Champagne: a review of the new biography of the Widow Clicquot. (Seven things to do with leftover Champagne from myrecipes.com) And if it feels like all that egg nog and mince pie you ate over Christmas made you stupid, it probably did. JUST ADDED: The January 2009 issue of Bon Appetit Magazine has printed one of Vikram Vij's recipes in its reader request column. "Chicken in Cardamom-Yogurt Sauce with Red Bell Pepper and Shallot Curry" is printed in full in the magazine and does not appear to be posted online.
